Take and Bake my Almost Famous Meatloaf. I LOVE meatloaf and have probably made 30 or 40 different kinds in the past. This is my favorite version with a mix of ground beef and hot sausage plus bell pepper, onion, garlic and raisins (shhhh they soak up ALL the juices and become this delicious pop of flavor - the raisin is seriously living it’s best life here.

Portions for 2 will take 20-25 minute and portions for 4+ will take about 45 minutes in the oven.

Ingredients

Meatloaf: Ground beef, Italian sausages, bell peppers, onions, garlic, ketchup, mustard, salt, pepper, eggs, panko bread crumbs raisins

Mashed potatoes: Yukon gold potatoes, mascarpone cheese, butter, fat free half and half, salt, pepper

Carrots: Whole carrots, trimmed and roasted with olive, salt, pepper and maple syrup

Serving size is 4 oz of meatloaf, 2/3 cup mashed potatoes (2nd label) and 2/3 roasted carrots (3rd label)
