Herby Kale Salad with Sun-dried Tomatoes & Roasted Chickpeas

Back for a second week! A vegetarian meal of a salad! Two kinds of kale, arugula, lots of herbs - basil, dill & parsley - crunchy roasted chickpeas, goat cheese & a sun-dried tomato and lemon vinaigrette.

Icelandic Chicken Soup

In a fancy resort in the Blue Lagoons, there is a restaurant that serves a soup like this (or so the NYT tells me) - roasted tomatoes, bell peppers, onions and garlic are blended together with lots of Dash veggie stock, pulled chicken, spinach, and made creamy with a little fat free half and half and reduced fat cream cheese.

Coconut Curry Meatballs

Tender chicken meatballs and basmati rice with lots of veggies - bell peppers, sugar snap peas, broccoli, lots of herbs - and a flavorful yellow curry broth served on the side so nothing gets soggy. Portions for 2 or 4.

Chipotle Salmon Grain Bowl

A blend of basmati rice, French lentils and quinoa topped Wild for Salmon salmon bites. Comes with a cucumber avocado and herb salad and chipotle drizzle. Singles or portions for 2-3.

Butternut Squash Pasta Bake

The easiest take and bake dinner, just preheat the oven and dinner will be done in 30 minutes. Silky butternut squash sauce with whole wheat pasta, Swiss chard, kale and spinach. Topped with provolone mozzarella cheese. Portions for 2-3 or 4+ come with the Dash House Salad.
