Ingredients
Pork chops are brined in orange pekoe tea, sugar and salt
Relish: bell peppers, jalapeno pepper, apricot preserves, apple cider vinegar
Salad: Watermelon, feta, mint, Kalamata olives, cucumber, light vinaigrette of red wine vinegar and honey
Serving Size is 1 pork chop with 2 Tbsp of relish + 1 cup of watermelon salad
Sodium is very difficult to calculate for the pork chops as they do absorb some salt from the brine, but the brine is not consumed.
